Chocolate nut bars

It's that time of year, where I have to bring cake for my workmates on my birthday. Phil keeps requesting carrot cake, but I really don't feel like making that.

I've decided to go a bit non-traditional. This is a slice that I LOOOOVED as a kid when Mum made it. I've no idea where the recipe came from - it was typed on a typewriter! Having now seen the ingredients list, it's not hard to see why I loved it...
  • 250g of softened butter
  • 1 firmly packed cup of brown sugar
  • 1 egg yolk
  • 1 tsp vanilla essence
  • 2 cups sifted plain flour
  • 1 cup choc bits
  • 1 cup chopped walnuts
Cream the butter and sugar. Beat in the egg yolk and vanilla. Stir in the rest. The consistency will be like a soft cookie dough.

Smoosh it into a tin (approx. 31 x 12cm, or mine is 22cm square). Put it in a pre-heated 180°C oven for around 20 minutes, or until it is a bit brown on top.

Cut it into slices while it is still warm, but leave it in the tin to cool completely (or else it will crumble).

This is so freakin' delicious. I may have made a mistake by baking it on Saturday, because I don't think it will last until Tuesday! Might have to come up with something else...

  1. That. Looks. DELICIOUS. I have to try this recipe as soon as humanly possible. I wish I could take it to work, but nuts are banned. Maybe I could just substitute more chocolate or something instead?

    1. Give it a go! I could imagine chunks of white/dark or dark/milk chocolate instead of walnuts. I'd love to hear about your variations!

  2. They look freaking awesome! I've been out of the kitchen for far too long. Well, that's not true. I've been out of the kitchen for purely selfish baking purposes for far too long :)

    1. Thanks! And yep, this is indeed an awesome recipe. I wouldn't have had these for at least 10 years, so the fact that they are so memorable really says something :-)
