Since we are setting off for a 10 hour drive tomorrow, I needed to make treats that would last the distance. That kind of rules out things like pavlova. Also, Uncle Steve is an awesome cook so I doubt that he needs me to supplement his feast!
This recipe for Christmas truffles takes about... 5 minutes and $10. You could probably get about 60 truffles from a whole cake, but I didn't need that many. Here we go:
- Half a Christmas cake (not pudding). It's great to use up old stale cake, or just buy a cheapy from the supermarket if you like.
- A splash (maybe 30ml) of orange juice
- 100g of white chocolate melts
- Sprinkles, cachous, or finely chopped glace cherries for decoration
Crumble the cake into a mixing bowl. Splash in the orange juice. Squish it all together with your hands.
I used small patty pans, and rolled the cake into little balls with wet hands (to avoid sticking). Put the cake into the patty pans.
Melt the chocolate. My favourite method is to use a Pyrex jug, and microwave for 30 seconds at a time on 50% power. Stir each time the microwave beeps. Don't worry about lumps, as it will continue to melt outside of the microwave.
Using a teaspoon, pour just a little chocolate over each cake ball, and drop your decorations on top before it sets.
