Mrs G's Quiche

This recipe comes courtesy of a friend. The name of the dish has been altered to protect the innocent! My sister and I may have The Blue Cookbook, but of course other families have favourite recipes too. I feel privileged to add this one to my own repertoire.

It's a good way to get a substantial amount of vegetables into somebody without them even realising (or so I've heard!).

1 cup self-raising flour (or, 1 cup plain flour with a teaspoon of baking powder)
1 cup grated cheese
375g grated zucchini (which are also known as courgette)
1/2 cup vegetable oil
3 finely chopped bacon rashers
1 finely chopped onion
5 lightly beaten eggs
Salt and pepper, to taste

Mix it all together. Put it into a well-greased Pyrex dish or loaf tin. Bake at about 190-200 degrees for 30-40 minutes, or until brown.

It is SO DELICIOUS. It would go well in lunchboxes either cold or hot, too. Providing you don't wolf it all down right after it's cooked, of course!

  1. Ha ha, glad you liked it! Shall be sure to pass the news on to Mumsy... From memory, the recipe's originally from one of the old school AWW cookbooks. But Mum has about a billion of them, and I'm not sure which one it is!

  2. Yes, it was very nice indeed. I love Women's Weekly cookbooks - the magazines are an insult to women, but at least they are great cooks!
